It is cold and wet out which means it is the perfect time for a nice hot cup of hot chocolate. However this poses a problem for those of us who have dairy allergies or lactose intolerances. Even though most coffee shops offer lactase or other milk alternatives, what most people don’t know is that the chocolate mix they use contains milk powder which can still act as an irritant.
I am not a coffee or tea drinker (weird I know). However I do love a mug of hot chocolate. So I searched the internet and magazines to find a completely dairy free version and this is what I am across and slightly modified it to suit my needs.
Hilary’s Dairy-Free Hot Cocoa Mix:
What you will need:
3 ½ cups of sugar
2 ¼ cups of cocoa powder
1 tablespoon of table salt
Non-dairy milk for serving (I have used both the So Delicious Coconut Milk and the Silk unsweetened Almond Milk, and both are fantastic with it. I am sure you could use Soy milk as well.)
In a large bowl, combine sugar, cocoa , and salt. Whisk to combine well. Store the mixture in an airtight container.
For individual servings, heat up 1 mug of non dairy milk in the microwave on high until hot. Place 2 tablespoons of the cocoa mix into a mug and slowly stir in the hot milk, mixing as you’re stirring (I find you have less lumps this way). If you have lumps you can always add in a touch of hot water and your set to go! Around Christmas time I like to add a Candy Cane or two, it adds a slight minty flavor.
This obviously isn’t the healthiest recipe, but its winter and you need a warm treat every once in awhile right?!
