I have just made the most fantastic No Bake Chewy Granola Bars. They are completely dairy free as well!! I found the recipe in one of my favorite dairy free cook books “Go Dairy Free” by Alisa Marie Fleming.
For this recipe you will need:
3 Cups of Crispy Rice Cereal
2-1/4 Cups Quick-Cooking Oats
1/2 Cup Sliced Almonds
½ Cup Unsweetened Shredded Coconut (I opted not to use Coconut)
2/3 Cup Chocolate Chips ( I used the Enjoy Life Dairy Free mini chocolate chips)
1/2 Cup of Agave Nectar or Corn Syrup
1/4 Light Brown Sugar, Firmly Packed
1 Cup Creamy Almond Butter or Peanut Butter
1-1/2 Teaspoons Vanilla Extract
1/2 Teaspoon Salt (omit if using salted nut butter)
Grease a 9x13 inch baking dish. Combine the cereal, oats, almonds, and coconut in large bowl, and set aside.
In a sauce pan, bring the agave or corn syrup and the brown sugar to a boil over medium heat. Immediately remove from the heat and stir in the nut butter, vanilla and salt.
Stir the gooey mixture into your awaiting cereal mix until it is well incorporated. Add chocolate chips.
Press the mixture firmly into the baking dish. Place in the freezer for thirty minutes and then cut into bars. Store bars in refrigerator or freezer for an easy snack.
